Avocado and Puy Lentil Salad Wrap

Suitable for Vegans!




  • ½ ripe avocado, peeled and de-seeded

  • 1 small shallot, finely chopped

  • 1 small red chilli, finely chopped

  • Juice of ½ lime

  • 100g cooked Puy lentils

  • 100g tinned sweetcorn

  • 30g pitted black olives, sliced

  • 75g cherry tomatoes, halved or quartered

  • 1 tbsp olive oil

  • 1 Deli Kitchen Brioche Style Wrap

  • 1/2 tbsp red wine vinegar

  • 1 small handful of parsley, roughly chopped


How to make

  • Place the avocado into a small bowl and mash with a fork. Add the shallot, 1/2 the red chilli and lime juice and season to taste.

  • Combine the Puy lentils, sweetcorn, black olives and cherry tomatoes in a medium bowl and drizzle with the olive oil and red wine vinegar. Season and mix well to combine.

  • Heat 1 Deli Kitchen Brioche Style Wrap according to the pack instructions. Spread the guacamole down the centre of the wrap and top with the Puy lentil salad. Sprinkle over the parsley and remaining red chilli. Roll up the wrap and enjoy immediately.
